I propose we create a USDC/USDT trading pair on Polkadex.

It is the second larget stablecoin in the market and the 7th largest token by market cap. However, there aren't many DEXes (if any) supporting USDC trading on Polkadot without bridging out.
I believe this is a great opportunity for us to list USDC and bring in another stablecoin to Polkadex and become the primary destination to trade USDC on Polkadot. This will also pave the way to allow tokens to be traded against USDC in the future.
